THE STORY

Balaboss means "master of the house."

Old Yiddish word, real specific feeling. The balaboss is the one whose house you're in. The one who sets the table. The one who, the second you put your fork down, is already saying eat, eat, you barely touched it.

Pastrami anchors the board because pastrami is the thing the Jewish deli built itself around. Brisket, brined for two weeks, smoked low, peppered hard, sliced by hand. It's the thing every other thing on the board is on the board to be next to.

Three sizes because no table should be left out. Small for the night it's just the two of you. Family for Friday with the kids and your in-laws and a bottle of wine. Shabbat for the night that started with eight people and somehow turned into fourteen and somehow there was always enough.

Community-shaped because nobody has the monopoly on what belongs on a Jewish table. Your grandmother's pickle, your aunt's babka, the sauce your dad made up one night that's now family canon — that's what the rotating slot is for. Pastrami stays. Everything else, we figure out together.
