Jewish heart. Italian form. Everyone invited.
The whole brand is in this one pie. Oy is the sigh your
grandmother made setting down the platter. Pizza is what
the table was reaching for. We put them in the same sentence and
stopped arguing about it.
Why pastrami as the anchor? Because nothing else says
Jewish-in-America quite the same way. Thick-cut, peppery, warm — and
somehow it belongs on a crust. Try it and tell us we're wrong.
Why Classic and Parve, every single time? Because a
pizza that only works for half the room isn't the pizza we want to make.
Classic is classic. Parve means anyone keeping kosher, anyone avoiding
dairy, anyone who just doesn't feel like cheese tonight — still gets
the full OyPizza. Not a lesser version. The full thing.
Why the 21-inch gold platter? Because food you set
down loud is food you eat loud. The platter is a little bit of theater.
It says this is for all of you, at once.
Why five sauces? Because no two bites should have to
taste the same. Hutzpa is the Hebrew for nerve, gall, the audacity
to show up with an opinion. If we're going to name a sauce that, it had
better earn the name. Five of them, on every pie, so everyone at the
table gets to be a little bit hutzpadik.
Structure is ours. What goes on top? That's ours together.
