Classic uses regular dairy cheese — mozzarella the way pizza's been made for a century. If that's your pie, that's your pie.
Parve uses dairy-free cheese — good dairy-free cheese, the kind we'd eat ourselves. Kosher-friendly. Works for anyone keeping meat-and-milk separate. Works for anyone who just can't do dairy.
